Pumpkin Pie CBD Pudding Shots
Posted: 2020-11-17

Fall is the perfect time to celebrate all things pumpkin. Whether you’re a fan of pumpkin spice lattes, pumpkin pancakes, or simply a slice of pumpkin pie, there are so many creative ways to incorporate pumpkin and spice flavors into a number of seasonal recipes. One of my favorite ways to highlight this autumn classic is to make Pumpkin Pie CBD Pudding Shots!

Spiced with a blend of cinnamon, ginger, nutmeg, and cardamom, these delicious infused shots are incredibly simple to prepare and oh-so adorable. If you’re looking for a fun and festive treat to bring to a fall gathering or to make for the holidays, this scrumptious recipe is guaranteed to be a hit with your canna-curious friends.

While preparing this recipe, keep in mind that you’ll be using a CBD-rich oil to infuse the pudding shots.
For best results, I recommend using Care By Design’s 18:1 Full Spectrum CBD Drops for a healthy dose
of CBD, CBDA, THC, and THCA. This blend is a perfect match for those who are sensitive to THC, but would still like to benefit from the ensemble of phytocannabinoids, terpenes, and flavonoids that work together to produce enhanced beneficial effects. An 18:1 ratio is also known to help soothe occasional stress, which can help us remain calm during the hectic holiday season.

To ensure a puddling-like consistency, you’ll want to purchase unflavored gelatin at your local grocery
store. For this recipe, I used the brand Knox, which was easy to work with and reliable as the texture
turned out just right. Remember, it takes about eight hours for gelatin to set correctly, so be sure to
allocate enough time to let the puddling firm before serving. Once the CBD pudding shots are ready, add
a dollop of whipped cream and a sprinkle of cinnamon and nutmeg for an authentic pumpkin pie
experience!

Servings: around 8 pudding shots

Target Dose: 6 mg CBD | < 1.5 mg CBDA | < 1 mg THC | < 1 mg THCA per jello shot or your preferred dose (using Care By Design CBD-Rich 18:1 Sublingual Drops)

Equipment:
Saucepan
Whisk
4-cup easy pour measuring cup
2-ounce shot glasses (up to 8 glasses)
Baking sheet

Ingredients:
1 cup water
1 envelope unflavored gelatin
½ cup canned pumpkin
½ cup evaporated milk
¼ cup sugar
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
⅛ teaspoon ground allspice
⅛ teaspoon ground cardamom
Pinch of salt
½ teaspoon Care By Design CBD-Rich 18:1 Sublingual Drops (or your preferred dose)
Whipped cream and a sprinkle of cinnamon and nutmeg to garnish

Directions:
Bring one cup of water to boil. Add the gelatin, then use a whisk to quickly stir until the gelatin powder fully dissolves into the water. Reduce the heat, then add the pumpkin, evaporated milk, sugar, spices, and a pinch of salt. Use a whisk to stir the blend until the sugar dissolves. Be sure to whisk the mixture extremely well, creating a slight froth and foam to best combine the ingredients! Remove from heat, let cool slightly, then carefully stir in the Care By Design CBD-Rich 18:1 Sublingual Drops. Whisk together again until the oil blends into the other ingredients as best as possible. Carefully transfer the mixture into a 4-cup easy pour measuring cup, then evenly pour the CBD pumpkin pudding mix into eight 2-oz. shot glasses. Place the shot glasses on a small baking sheet, then store them in the refrigerator overnight until the pudding shots set. The next morning, the pumpkin pudding should be firm to the touch. Top with whipped cream and a sprinkle of cinnamon and nutmeg before serving. Enjoy!

How To Make Homemade Whipped Cream

Yield: about 2 cups

Equipment:
Mixing bowl
Electric hand mixer
Ingredients:
1 cup cold heavy whipping cream
2 tablespoons confectioner’s (powdered) sugar
1 teaspoon vanilla extract

Directions:
Place a large mixing bowl into the freezer to chill for five minutes (the goal is to keep things as cold as
possible while preparing the whipped cream!). After the five minutes are up, remove the bowl from the
freezer, then add the heavy whipping cream, confectioner’s sugar, and vanilla to the bottom of the chilled bowl. Use an electric hand mixer to beat the mixture together until the whipped cream forms stiff peaks.

At this point, you can use the whipped cream right away or transfer it into a whipped cream dispenser for further use.
